Greg explains that barbecue chefs should be aware of having an indirect zone and a safe zone on a grill so you can move a steak to a safe spot if its getting too hot.
Reverse searing is recommended for thick steaks … that’s when you smoke the meat first at about 111°F, and then finish by chargrilling extremely hot for about 60 seconds on each side.
